If you're faced with rapidly changing light situations, you can also use exposure bracketing. On most cameras, exposure bracketing captures a set of three images: one with a minus exposure, one at the suggested exposure, and the final image with more than the suggested exposure. You can often set the amount of compensation, but I typically use a 1/2-stop increment in both directions to ensure that one of the images is accurately exposed.
